O.K. the beets are in. I just love them. Here's my fav. receipt....
Roasted beets with balsamic vinegrette dressing....
Preheat oven to 375
wash and trim beets of greens
put beets into foil pouch and roast till soft(aprox. 30 to 45 min)
remove from oven and cool
remove skins and cut up into chunks
drizle with olive oil, balsamic vinegar, salt and pepper
enjoy!
